Sheffield Wednesday boss 'amazed' Derby County clash ended goalless

SHEFFIELD Wednesday Stuart Gray was "amazed" that Saturday's Championship clash with Derby County ended goalless.

Gray felt his side should have taken all three points from the encounter at Hillsborough.

Former Rams forward Chris Maguire was denied by the crossbar, Glenn Loovens had a header cleared off the line and Lee Grant also made some important saves.

However, Derby could have won it themselves in the closing stages.

"It was two good teams both going for the win and I'm amazed it's finished 0-0," said Gray.

"I wanted a fast start and I just thought we nullified them really with the intensity and the hard work we put in.

"It was an entertaining 0-0 draw, I'm just disappointed that I'm not talking about us getting the three points.

"I thought we had a 20-minute period in the first half where we probably dominated the game.

"But that's a quality side we've played, so the players should take a lot of encouragement from it.

"It just shows you how important goalkeepers are in your team. Lee Grant did very well for Derby and when Keiren Westwood had to pull off a save (from Johnny Russell), around about the 80th minute, it was a big save for us."

THIS video shows the fascinating work to create more than 880,000 poppies which have been placed at the Tower of London to commemorate the outbreak of the First World War.

The 888,246 poppies have been created by Derby designer Paul Cummins, along with his team, at a studio in Derby's Pride Park to represent each person killed in the war 100 years ago.

The installation is called Blood Swept Lands And Seas Of Red and each of the poppies is available for sale at £25 to raise money for six military charities.

The poppies are continuing to fill the dry moat at the Tower and more than 200,000 were sold in the first week after the installation was officially launched on August 5.

Food, by Kevin Zhou: Seaweed salad adds subtle sweet taste to a meal

It's not everyone's cup of tea, but seaweed salad is a popular choice at Cosmo Derby – and with this simple recipe you can recreate it at home.

IT'S the summer holidays and everyone is jetting off to beach resorts across the world.

Many might be avoiding the seaweed washed up on the shore, or throwing it at their unsuspecting family members in fun.

But we here at Cosmo Restaurant are serving it up. It's a different kind of seaweed to that found on the beach, though – don't worry!

It's a really popular choice and adds a subtle sweet taste and crunch to a meal.

But you'll not find it in your average supermarket – you'll have to make a special trip to the Chung Wah Chinese shop in Wilmot Street in the city centre.

Seaweed comes in two forms – salted and dried. Either will work for this recipe.

With the salted seaweed, make sure you soak it in cold water for around 30 minutes to dilute all the saltiness. Drain it and cut it into bite-size pieces.

For the dried seaweed, just cut up into bite-size pieces and set to one side while you prepare the rest of the dish.

This recipe also calls for miso – something not often used in western cooking. It's a fermented paste made from soya beans, rice barley, wheat or rye and is often used in Japanese and East Asian cookery.

It's deeply savoury, imparting a rich intensity to a dish, whether that be this salad, a classic miso soup or marinated meat, fish or vegetables.

It can be an acquired taste, so maybe add it little by little until it's how you like it.

Dashi stock will also be found in the Chinese supermarket and is in a form the same as stock cubes used in everyday cooking.

Dashi forms the base of miso soup and is also used for noodle broth, adding a hit of deep flavour people have come to expect from Japanese food.

Don't be afraid to give it a go, it's refreshing and is a perfect starter or side dish to a Japanese meal.

Ingredients

(enough to feed four)

120g seaweed

10 tbsp white sesame seeds

10 tbsp vinegar

10 tbsp dashi stock

9 tbsp sweet light miso

4 tbsp sugar

Method

1. For salted seaweed, soak for 30 minutes. Drain and cut into small pieces.

2. Make the sesame – vinegar – miso. To do this, roast the sesame seeds and grind well in a pestle and mortar.

3. Add the sweet light miso sugar and grind some more.

4. Marinade this mix in the vinegar, sugar and dashi stock.

5. Arrange the seaweed on a plate.

6. At the centre of the seaweed, place the sesame – vinegar – miso mix.

7. Serve.

This is also really good with carrot, cucumber and celery – use these as the base instead of the seaweed, or make it more of a mix.

Shallots and wine vinegar also make a delicious dressing – finely chop the shallot and flash fly over a high heat with salad oil.

Add the wine vinegar and drizzle over the salad mix.

It's easy to put together and has a great impact when served to a table full of hungry guests.

See what you think of our recipe – we hope you like it!

New Derby Marks and Spencer store at risk if rail building is of 'historical significance'

PLANS to build a new Marks and Spencer food store in Derby could hit the buffers if a former railway building that is being demolished to make way for the development is deemed to be of historical significance.

Plans have been submitted to Derby City Council to build the new Simply Food store in Wyvern Way on land currently occupied by the Derby Fireplace Company.

The business trades from a former railway building, which would be pulled down to make way for the new development.

It would also include 130 new parking spaces.

The M&S store would be one of three new units built at the site – and the plan is for the Derby Fireplace Company to move into one of the other units.

The scheme, which is a joint venture between Londonmetric Derby and Clowes Developments, is currently in the consultation stage.

But the consultation has so far already raised questions about the historical significance of the building that will be demolished.

Among those who have raised concerns is Steve Baker, Derby and Derbyshire development control archaeologist, who is based in the Economy, Transport and Environment department at Derbyshire County Council.

According to Mr Baker, the Derby Fireplace Company building is a surviving part of the former Chaddesden Sidings goods marshalling yard.

The building was once used as a wagon repair workshop and is believed to date back to 1873.

Mr Baker said that, according to a section of the Government's National Planning Policy Framework, the developers must look into the history of the building.

It has been the home of the Derby Fireplace Company for almost 20 years after the firm applied in 1996 to change the use of the building to a shop.

In a letter submitted as part of the consultation process, Mr Baker writes: "The applicant needs to establish the significance of heritage assets within the site.

"In the absence of any heritage submission, the application does not meet this requirement.

"To address this omission the applicant should provide a 'heritage statement' or similar, carried out by a recognised and accredited specialist in historic buildings.

"It needs to include a buildings appraisal of the former wagon repair workshop, along with sufficient background research to enable the building to be set in context and for its significance to be assessed in relation to regional and national comparators."

In its application to the city council, the developers said that building was "in need of refurbishment and if left in its current state would become unsightly over time".

If the development is given the go-ahead, M&S said the new store could create up to 55 jobs, comprising a mix of full-time and part-time positions.

The new store would be in addition to Simply Food stores in the Intu Derby shopping centre and Kingsway Retail Park.

Blaze at former Grange Hotel: Derbyshire firefighters work through strike to put out flames

FIREFIGHTERS worked through their planned strike action after they were called to a blaze at a former Derby hotel.

Crews from seven fire stations were sent to the two-storey building blaze in Ingleby Avenue, Normanton, at about 10pm yesterday.

Firefighters in Derbyshire were on strike from noon to 2pm yesterday and from 10.59pm to 11.59pm – in a continuing row with the Government over pensions.

However, a spokesman for Derbyshire Fire and Rescue Service said crews attending the Normanton blaze worked through the strike.

He said it was part of their agreement to continue working if they were already at the scene of an incident.

Some fire service staff were still at the scene today, damping down hot-spots and an investigation into the cause of the blaze was carried out.

Nobody was injured.

Award-winning Derby mum helps plan weddings with a difference – even in a cowshed!

More and more people are opting for vintage weddings rather than booking a traditional white package for their big day. We speak to an award-winning Derby wedding stylist.

WHEN Karen Eggleton tied the knot she did it in style – in Las Vegas.

And after experiencing her own perfect day, she now helps other loved-up couples recreate their dream wedding.

Karen, a mother-of-two, runs Darby and Joan – a bespoke wedding and event styling company based in Allestree.

From styling weddings to offering vintage crockery for hire as well as a VW Camper Van, the business covers everything to create a unique vintage wedding.

She scooped a top accolade at the Wedding Industry Awards, winning the National Venue Stylist Award 2014.

Karen, 41, said: "Not everybody wants the traditional wedding of white linen table cloths, candelabras and crystals scattered on the tables.

"For a lot of people, that was probably all that was on offer when they got married.

"People didn't know they could do it differently. We want to give people something unique."

The idea for Darby and Joan – a phrase often used to describe a devoted married couple – first came about in 2010.

"It was around this time that Kirstie Allsopp came on the scene with home styling, upcycling was a trend, and the Great British Bake Off had just started," said Karen.

"I wanted to work from home and set up my own business. I had always had an interest in fashion and interiors and old pieces of furniture.

"I wanted to do something creative, something that was not office-based. I wanted something that I could call my own."

Karen began creating candles in vintage tea cups, as well as making three-tier cake stands.

"I began exhibiting at some big wedding fairs across Derbyshire and a lot of people asked if I hired my crockery for events," said Karen.

"The first thing I did was investing in setting up a website. At this time, we did not have a studio so this was my shop front, this was my brand.

"It took about six to eight months to collect the stock and get started."

And in 2011, the business was officially launched.

Karen used to work in the law industry – but looking at her stunning home and studio, littered with antique curiosities, it is hard to imagine her working in any other trade.

Karen said: "It's quite strange because four or five people I know also left law to move into a more creative job.

"When I first started, I had a box of things that I would lay out on the kitchen table and show people.

"But the business took off and soon I had to convert a bedroom into a studio.

"I hold the consultations at my home. I want people to see what I have at my house and the sorts of things that I love. We like photography and films and old furniture – so my home is almost an extended studio.

"People have walked round the house and have asked to borrow the bookcase we have in our kitchen and all sorts of furniture. Luckily, my husband doesn't mind!"

Karen said her business did the "whole service".

"We can sort everything – from wedding styling to crockery, catering as well as waiters and waitresses," she said.

"We also have contacts for suppliers for flowers, cakes, stationery – things that we do not provide."

Karen married husband Steve 12 years ago in Las Vegas.

She said: "We only had our parents there, it wasn't a big wedding.

"We spent a week in Vegas before honeymooning in San Francisco. It was totally different to a traditional wedding."

Along with helping to style many of her friends weddings, Karen has styled weddings in marquees, tipis, and even in a cow shed.

Karen said: "This particular bride lived on a dairy farm and said she wanted to get married in one of her cow barns.

"When I arrived to have a look, there were still cows in it! We did an amazing job and it was great fun."

And she also provided range of crockery from table settings to serving bowls for the marriage of celebrity stylist and bridalwear designer Kate Halfpenny.

None of the crockery matched but was made up of Karen's collection of vintage English china, built up by visiting car boot sales, house clearances and auctions.

Derbyshire-born Miss Halfpenny has designed costumes for adverts for Pepsi, Ghost, Moschino and Hugo Boss and has styled George Michael, Kate Moss, Twiggy, Shirley Bassey and Pixie Lott.

Karen said she had already helped style 17 weddings this year – and had many more planned until the end of the wedding season in September.

And when she is not planning weddings, Karen hires out her crockery and helps style hen parties, as well as other events and photoshoots.

Every day I regret ugly illegal tattoo I had at 16, says Derby beauty therapist

A BEAUTY therapist said a "deformed" tattoo she had when she was underage left her having to be tested for HIV and hepatitis.

Lauren Anthony, 19, visited an unlicensed parlour when she was 16 and had a swallow tattooed on her stomach.

The law states people should be 18 to have a tattoo. Lauren said she was never asked to prove her age and said she regrets it.

Lauren, of Uttoxeter Road, Mickleover, said: "It is terrible and looks more like a deformed bird with a broken wing.

"I was charged £10 for it, and I didn't know what would happen.

"I believe the person doing it was using a needle at the wrong depth.

"I wanted to leave because I knew something was not right."

Lauren said the tattoo will leave her £200 out of pocket for four hour-long sessions for another larger tattoo to cover it.

According to the Tattooing of Minors Act 1969, it is an offence to tattoo a person under the age of 18, except when the tattoo is performed for medical reasons by a duty qualified medical practitioner or by a person working under his direction.

Lauren said: "I've paid £10 for something that looks like a child has done.

"I can't wait to save enough money to get it covered."

She also believes the tattoo was done without sterilisation, exposing her to the risk of disease.

She later had blood tests at hospital which all came back negative.

She said: "It was a big relief. The tattoo makes me feel horrible and disgusting but it was something I chose to do.

"I did it when I was 16 and they were willing to. I was very naive at the time but I had them recommended to me.

Lauren added: "I regret doing it so much because it's horrible.

"At first, although I was nervous at what had happened, I did not realise how bad it was.

"My parents were not at all impressed when they found out. I went from being excited with it to thinking this looks really awful.

"I did not report the people who did it to the council at the time because I was only 16. I thought I was in enough trouble already without anything else happening."

When Lauren had her tattoo, she already had various body piercings and was attracted to the artistic nature of a tattoo.

She said: "I do not like people looking at it because it is revolting. A tattoo is permanent but a piercing isn't.

"It's stopped me wanting to go and visit places because people will see it. I really don't like people looking."

Tattooist Kevin Paul, who runs Kevin Paul Tattoo, based at Crow Studios, in Great Northern Road, Derby, said Lauren's situation was very worrying.

He said: "People come to me with problems like this all of the time, it's terrible.

"It's become an every day occurrence and it needs to be reined in."

Cattle, dogs, horses and motorbikes entertain thousands at Ashbourne Show

ORGANISERS of one of Derbyshire's most popular one-day agricultural shows hailed this year's event a great success.

Thousands of people poured in to Osmaston Polo Ground on Saturday for the Ashbourne Shire Horse Society's 123rd Ashbourne Show.

The annual event was blessed with dry and mild weather and some of its strongest entries in recent years kept judges busy throughout the day.

More than 200 cattle were brought in from farms across the area to be judged, along with around 240 sheep and 56 Shire horses, alongside light horse competitions that ran throughout the day.

The main ring performances included the daring Motor Stunts International display team, Dingle Fingle the clown, and displays and presentations with the competing livestock, culminating with the grand parade in the afternoon.

Shortly before the grand parade a World War II Hurricane aircraft wowed the crowds as it flew over the showground several times.

Chairman of the organising committee Bill Carr said: "It's been absolutely fantastic.

"The number of people who have come to see me to say how it's been a wonderful show was amazing.

"People have told me how proud they are of it and how they would never want to see it changed.

"I can say on behalf of everyone on the committee, and everyone that's helped to put it together, we're very pleased with this year's show."

Among the visitors enjoying the show was leader of Derbyshire Dales District Council Lewis Rose, who is a vice-chairman of the Ashbourne Shire Horse Society.

He said: "It's a great event for the Derbyshire Dales and not just for the families but for all the many businesses that are here."

Commercial stands proved as popular as ever, with strings of businesses, charities and organisations turning up to meet customers and colleagues throughout the day.

James Dixon, from Westpoint Veterinary Group, in Ednaston, was on a stand at the show.

He said: "We are really enjoying it so far. It's a nice day.

"It's been good to see some of our customers, both current and potential clients.

"We have been before but this year it's good to see lots of farmers and lots of livestock – particularly such a good quality of livestock."

Lucy Paxman, 32, from Normanton, was at the show for the first time with her two children.

She said: "I've not been before but saw it advertised so we thought we would come and make a day of it.

"We're surprised at how big it is and we are pleased there is lots to do for the children.

"We all thought the clown was really funny."

Derby County's Real Madrid youngster settling in quickly

$

DERBY County have been surprised and delighted by how quickly Spanish midfielder Omar Mascarell has settled.

The 21-year-old is on a season-long loan from Real Madrid and is pushing for a first start in tonight's Championship clash against Charlton Athletic at The Valley.

He appeared as a substitute in each of Derby's two League games so far and has impressed.

"Omar has played himself into contention to start, he is definitely doing enough," said first-team coach Paul Simpson.

"We wanted to treat him the same way we did George Thorne last season where he had to come in and had to see how we play, and learn how we go about our business.

"Omar has picked things up very quickly. He is a very good footballer and an intelligent lad.

"He has done enough to be pushing the manager for a start. Whether it is at Charlton or at the weekend in our home game against Fulham, we will just have to wait and see.
